Slice apples, sprinkle with cinnamon, and begin cooking over medium heat. Beat eggs and soy milk together with a fork. Turn apples so that they cook evenly. When apples begin to look soft, pour egg mixture over them. Sprinkle ground cinnamon, nutmeg, and ginger over the egg mixture to taste. When egg mixture is set on the bottom and still a bit soft on top scatter blueberries over the top. Cook for a few minutes more until egg mixture is set. Gently slide a spatula under one side of the frittata and fold in half. Fold in half again if necessary to fit it on the plate. Slide out onto plate.
