This is so easy, and the result is a wonderfully sweet, smooth apple spread that's low in calories and basically fat free. Peel and quarter the apples. Place in slowcooker with the vanilla extract. Cook on low for 8-10 hours or so.Mash apples with fork. Add the rest of the ingredients, cook an additional 3-5 hours, still on low. Puree in blender to desired smoothness (you can skip this step if you prefer a chunkier apple butter; it only takes a few seconds to get a nice, smooth apple butter in the blender). NOTE: I like to buy bruised and over-ripe apples off the distressed cart at my grocery store, which is a great way to make cheap apple butter. Your apples don't have to be pretty or particularly fresh.The timing is up to you. I started my apples around 7pm, went to sleep, smashed them and added the other ingredients around 6:00 the next morning, then blended and jarred it a couple of hours later.
