Cook until all ingredients are blended well together and smooth. Add vanilla and whisk again. Let cool for 5 minutes. In a bowl, combine cinnamon, oats, salt and apples. Add liquid mixture and stir to combine. Dump it into the center of the baking dish. Wet hands and then press mixture into the pan (with dry hands you'll have a mess!). Push down so they are in as tightly as you can get them. Bake for 22 minutes or until the sides of the bars are lightly browned. Remove pan from the oven and allow it to cool on a baking rack for 15 minutes. Remove the bars by pulling up on the parchment paper and put the bars (with the parchment paper) on the cooling rack and allow them to cool completely (approximately 45 minutes - an hour). Slice and store in a tightly sealed container at room temperature. I like to store mine in "snack" bags and keep them in the freezer so they last longer.
