I sliced the eggplant in half lengthwise, then cut each half in 1/8" slices, little half moons. I arranged them on my cookie sheet (it took 2 sheets to get them all in one layer) and lightly sprayed with cooking spray. I put them in the oven for about 10 minutes before they had begun to brown and were ready to flip over. I flipped them and baked them for another 5 minutes or so. I took them all out and transferred to a plate to cool while mixing the sauce.I lowered the oven heat to 350. I dipped the slices into the sauce and placed them back on the parchment covered pans. This time all slices fit onto my largest cookie sheet in a single layer.I baked them for longer than the suggested 3 minutes, because they were still pretty limp. I gave them 8 minutes, then turned off the heat and let them sit there while I wrote this recipe up, about 10 more minutes. They were nicely crispy then, so I put them on a Fiesta plate for their closeup.6 crispy slices in a sandwich were perfect! They were flavorful and a perfect addition to a sandwich.
