3 cups cooked whole wheat macaroni
1 Tbsp olive oil
1 cup chopped onion
1.5 cups kidney beans, drained and rinsed
1/4 tsp cinnamon
1/8 tsp nutmeg
2 cups pasta sauce
2 cups swiss chard, chopped (or spinach)
1 cup plain yogurt (2%)
3 egg whites
2 Tbsp grated parmesan cheese

Here is how you make Greek Macaroni Bake:

Fry onions in oil until tender. Remove from heat then add kidney beans and mash lightly. Add cinnamon, nutmeg and pasta sauce and mix well. Spray a 6x10 baking pan. Spread 1/2 of macaroni in pan, then cover with chard. Spread 1/2 of pasta sauce over chard. Top with remaining macaroni, then remaining sauce. In a small bowl, whisk yogurt, egg whites and cheese together. Spoon evenly over casserole. Bake uncovered for 45 minutes at 375F.
