1/4 teap. pepper
1/2 C chopped red onion
1 can 2 1/4 oz sliced olives
1 cup (4oz) shredded red-fat Mexican cheese blend

Here is how you make Southwest Bake:

Cook rice in water to a boil. Reduce heat ans simmer for 35-40 minutes.In large bowl combine beans, corn, tomatoes, salsa, sour cream, cheddar cheese, pepper and rice. Transfer to a 2 1/2 qt. baking dish coated with Pam. sprinkle with onion and olives.Bake uncovered at 350 for 30 minutes.
