This recipe is super easy to prepare and is quite filling for several hours. I love dishes that are heavy on carbs and cheese, and this version makes me really happy. It's also good out of the freezer, so I take it to work for lunch.You could probably cut the calories and the sugar more by using a different sauce, but I just threw this one in the recipe because it was listed.

Mushrooms, fresh, 1.5 cups slices
Mozzarella Cheese, small pack (about 8 oz)
Garlic, minced and canned, about .5 cups
Carrots, raw, 1.5 cups, cubed or sliced
Marinara sauce, about 2 cups or a little jar
Olive Oil, 2 tbs
Basil
Spaghetti Squash, 6 cups ( I estimated this, I just get a large squash and use the whole thing)

Makes 6 big servings1. Preheat oven to 350 degrees.2. Slice the spaghetti squash in half. Spray a baking sheet with no-stick spray and place the squash halves face-down on the baking sheet. Put in the oven and set the time for 1 hour.3. Prepare all your vegetables for the lasagna bake: peel and slice the eggplant into thick (1/2'' to 3/4'' slices), peel and cube the carrots, slice the zucchini squash (1/8'' slices), and wash the mushrooms.4. On a griddle or skillet, grill the eggplant slices over medium to medium-high heat, using 2 tbsp of olive oil. Turn them over once, remove from the heat when they start to appear more transparent around the edges. Do not overcook them!5. You will assemble and bake your lasagna in a glass casserole dish. I think mine is roughly 8''x11'', but you could use a different size. Spray your dish with no-stick spray.6. Using half of your ingredients, assemble the layers as follows: eggplant slices, liberally applied garlic, mushrooms, basil (as much as you want, go crazy), zucchini squash, carrots, and marinara. Sprinkle with about 1/4 of your mozzarella.7. Make a second layer of all the ingredients. Still only use about 1/4 of the cheese (so...you should have half of the bag left by now...). At this point, it likely looks dry to you and you will want to add some extra oil or butter. It is not necessary, trust me on this. 8. With about 25 minutes left on the timer for your spaghetti squash, pop the lasagna in as well, and walk away. 9. When the timer goes off, remove the spaghetti squash from the oven. When you do this, throw the rest of your cheese on top of the lasagna bake and keep that going in the oven. Let the squash sit for about 10 minutes.10. Remove the seeds from your squash (and reserve them for later snack-making). Using a fork, pull the sides of the squash away to break it up. 11.
