What Are The Ingredients For Italian Baked Eggplant Recipe?The ingredients for Italian Baked Eggplant are: 1 large eggplant1 cup bread crumbs 6 tsp olive oil 15 green olives, diced (may use black olives as a substitute - sometimes I use both) 3 garlic cloves, minced dash of thyme, dried parsley, salt, pepper (optional) How Do I Make Italian Baked Eggplant?Here is how you make Italian Baked Eggplant: Preheat oven to 400 degrees. Put about 2 tsp of the olive oil in the bottom of a baking dish. Cut the top off of the eggplant, and cut the eggplant in half longways. Cut slits into the meat of the eggplant, but do not pierce the skin. Lay the eggplant halves face up in the baking dish.In a bowl, combine the bread crumbs, diced olives, minced garlic, 4 tsp of olive oil, and seasonings. Mix until bread crumbs are moist. Using your hands, cover the face of each eggplant entirely with the bread crumb mixture. If any meat is showing, it will not be tender after cooking. Place in the oven and cook until the bottom of the eggplant begins to sag and it is tender, usually about 45-55 minutes depending on how large the eggplant is.This recipe makes 2 large servings of one half eggplant each.You can easily divide this recipe up into four servings for less calories and serve a low calorie side with it, such as boiled carrots or a spinach salad.Nutritional Note: Although the fat seems high in this recipe, remember that olive oil has the very highest percentage of monounsaturated fat, the most healthy kind, of all the oils out there.
