2 tomatoes, seeded and diced

Here is how you make Italian Baked Squash:

Back squash, skin side down on a roasting pan lined with parchment paper. Brush with oil and sprinkle salt and pepper on them. Bake at 400 degrees for approximately 20 minutes, or until tender (pierce with a fork). While squash is baking, mix peppers, feta, tomatoes, garlic, basil, pine nuts and bread crumbs together. When squash is tender, scoop the tomato mixture onto the squashand bake for an additional 10 - 15 minutes, or until golden. Top with additional basil if desired.
