The original variation I did to Alton Brown's baked tomato sauce recipe. I wasn't struck by the sauce, it was good and very thick, but I couldn't stop my DH from eating the baked tomatoes before I even had a chance to blend it into sauce! So, I sprinkled some cheese on and browned them and tahdah! Some things we do with these is have them on salad, or on toasted English muffins as a pizza substitute. I have also sprinkled with taco meat and low fat cheddar for a Mexican dish and stuffed them with lil meatballs and covered them with chopped up chicken and mozzarella cheese. You can do whatever you like...really. And sooo good for you.

Here is how you make Cyndi's Baked Tomato Italiano:

Preheat oven to 325F. Spray large baking dish or jelly roll pan with nonstick spray. Cut tomatoes into half long way, scoop out seeds, arrange cut side up in baking dish and sprinkle evenly with garlic, onion and basil. Pop into oven for 90-110 minutes. Tomatoes will shrink a lot and flatten somewhat. Remove from oven and increase temp to 375F. Sprinkle evenly with cheese, then return to oven until cheese is melted [or browned if you like that], about 10 minutes.
