4 medium Yukon Gold Potatoes, unpeeled, cut into 1 inch wedges
I small bell pepper, chopped (approx 1/2 cup)
4 small or 3 medium Zucchini,, sliced (approx 2 cups)
Broccoli, fresh, 1 bunch, cut into florets, stems peeled and sliced into 1/8 in thick medallions
1 large Eggplant, peeled and cubed
1/2 lb Green Beans, tipped and tailed (or one bag of ready to eat fresh green beans)
1 14.5 oz can Muir Glen Diced Tomatoes, no salt added, undrained
1/4 c Parsley, or mixture of parsley and other fresh herbs
1 tsp dried Thyme
1 tsp dried Oregano
4 cloves garlic, chopped
1/3 cup Olive Oil
Salt & Pepper to taste
Juice of one lemon (or more to taste)
water




How Do I Make Mediterranean Baked Vegetables?

Here is how you make Mediterranean Baked Vegetables:

1. Preheat oven to 450 degrees2. Toss all ingredients except lemon juice and water together in a large bowl. 3. Spread mixture in a tightly packed layer in a baking dish or pan (this may take more than dish or pan). Squeeze lemon juice evenly over the top and add up to 1/4 cup of water to each pan. 4. Put pan(s) in oven, reduce heat to 350 and bake, uncovered, for 1 hour and 45 minutes, turning the vegetables every 30 minutes or so. If baking on more than one level, swap the pan(s) on the top level with the pan(s) on the lower level once during cooking.5. Remove from oven, sprinkle with a little more lemon juice and, if desired, taste and adjust seasonings. 6. Let sit for at least 10 minutes before serving.
