Here is how you make Adzuki Bean:

Soak the beans overnight in a large pot of water. Drain and discard soaking water and rinse the beans. Add the beans to 8 cups of water and bring to a radip boil, reduce heat, cover and simmer for 1 1/2 hours. Add the carrots, parsnips and onion, cook for 10 mins.
