Cornmeal 2 tsp. baking powder 1/2 tsp. salt 2/3 C plain soymilk 1/4 C canola oil 1 Tbsp. honey (or agave or maple syrup) 2 scallions, minced How Do I Make Black Bean Casserole?Here is how you make Black Bean Casserole: In a large oven proof pot, cook the onions, bell peper, carrot and jalapeno in oil until the veggies start to get soft. Add garlic, chili powder, cumin, salt & pepper and cook another minute or so, then add tomatoes and corn. Mix well and let simmer. Turn heat to low and add black beans.For topping:Mix the flour, cornmeal, baking powder and salt together in a bowl. Mix the soymilk, oil and honey in another bowl and add to dry mixture until just combined. Fold in scallions.Now add cilantro to black bean mixture. Turn off heat on stovetop and carefully spread the cornbread batter on top of the black bean mixture.
