2 tbsp butter or olive oil
4 Tbsp Nutritional yeast
4 oz shredded cheddar cheese
2 garlic cloves, minced
1 sweet onion, chopped
1 tsp salt (1/2 for polenta, 1/2 for beans)
1 tsp chili powder
1 cup + 2 tbsp egg whites
20 ounces rotel tomatoes
4 cans black beans, drained and rinsed
1 tsp cumin
1 tsp garlic powder
1/2 tsp cayenne
1 tsp black pepper

Here is how you make Southwest Black Bean Polenta Casserole:

Preheat oven to 350F. Spray 2 9?13 casserole dishes and set aside.In a large pot, cook polenta according to package instructions. When polenta is almost done cooking, add in butter and nutritional yeast. Stir until creamy.Next, saute garlic and onion, then add salt (1/2 tsp) and chili powder. Stir onion mixture into polenta. Once combined, mix egg whites into polenta.Pour polenta mixture in bottom of casserole dishes and pack evenly into the sides. It should make a nice bottom layer for the casserole. If your polenta is too runny or moist, I suggest baking it first at 350F for 15-20 minutes, then removing and add the rest of your layers to bake again.Layer tomatoes/chiles peppers (drained if using canned) on top of polenta. Spread it out evenly.Next, drain and rinse black beans.Place in a bowl. Add cumin, garlic, the other 1/2 tsp salt, pepper, and cayenne. Toss all together.Layer the black beans on top of the tomatoes/green chiles peppers mix.Finally, add shredded cheese evenly on top of beans. Place casserole dishes on middle rack of oven for 30 to 35 minutes until edges start to brown.Remove and Cover with foil then bake an additional 5 -10 minutes or until center of casserole in baked through and edges are golden.Broil after cooking for crispy edges and cheese. Remove from oven and let cool 5 minutes before slicing.Serving Size:?1/6 of one casserole
