It is a really delicious and nutritious side or main dish that can be thrown together in minutes. This is traditionally served with slices of lemon and hard boiled eggs, sliced in quarters. Heat the oil in the pan over medium heat. Drop in the minced garlic, carrots and celery and cook for a minute or two. Open the cans and drain one of them, reserving the bean-water of the other. Add the beans and the reserved bean-water and stir. Add the chili powder or paprika (or other spice mix of your liking) and then add the white wine, stir and then follow that with the tomato sauce. Leave uncovered until it begins to get a gooey texture, stirring occasionally. Mince the parsley and add it after about four minutes and lower the heat to low. Add whole cloves of the roasted garlic if you have it and partially cover for about 30 minutes or until the beans start to break down. Stir every few minutes to make sure the beans aren't sticking to the bottom of the pan (though that often is the best part!). Add your salt or soy sauce (just a dab) just before serving.
