Bring to a boil, the cook on low until beans are soft; about 30-45 mins. Stir frequently to avoid burning. When beans are getting soft, use a masher or hand blender to give them a bit of a smooshed up texture - but don't puree it all. Partial is enough, so some texture from the beans remains. Stir in the fried paneer cubes (if you use frozen pre-fried ones as I do, just mix them in frozen.)In a separate pan, put a little oil and fry the cumin seeds until they begin to change colour... add the remaining spices, fry for about 30 seconds, then add the tomatoes. Simmer on low until the mixture is thick (about 5 mins). Stir into the mung bean paneer mixture, add cilantro, lemon juice, yogurt, and check salt levels.
