What Are The Ingredients For Lima Bean Plaki Recipe?The ingredients for Lima Bean Plaki are: 1/8 c. olive oil2 onions, chopped 4 cloves garlic, chopped 2 cans (14 - 16 oz.) diced tomatoes 3 carrots, diced or shredded 1 stalk celery, diced 1 can (14 - 16 oz.) vegetable broth (or homemade) 3 1/2 cups cooked lima beans OR 2 cans baby white lima beans, drained & rinsed 2 Tbsp. lemon juice 1 Tbsp. parsley (fresh is best) 2 Tbsp. dill weed 1/2 can (approx.) tomato paste Salt & pepper to taste How Do I Make Lima Bean Plaki?Here is how you make Lima Bean Plaki: In a heavy bottomed saucepan saute the onion, celery, garlic, and carrot in the olive oil. Add the canned tomatoes and cook for a few minutes longer. Add the vegetable broth and simmer for about 10 minutes. Add the beans, dill weed, salt, pepper and lemon juice. (If you're using dried parsley, add it here.) Simmer for 5 minutes and stir in the tomato paste.Simmer another 5 minutes or until stock is nearly gone and mixture is the consistency you like.Remove from the heat.
