8 oz sliced Mushrooms, fresh
6 oz bag Spinach, fresh
1/4 tsp Thyme, ground
1 tsp Nutmeg, ground
1 tbsp Parmesan Cheese, grated
1 tbsp Maple Syrup
1 cup Vegetable Broth
1/3 cup, chopped Onions
1 clove Garlic
1 15 oz can black beans- rinsed and drained.

Here is how you make Sweet Potato/Spinach/Black Bean:

Sautee onions, garlic, parmesan and mushrooms in vagetabel broth until onions tranlucent. Add thyme and nutmeg. Add black beans. Slice the baked sweet potatoes into 1 inch slices then, pour the maple suryp over them. Fold into sauteed mixture and then combine in the fresh spinach.
