Sweet Corn ? 1 tin drained or 1 cup frozen


How Do I Make Black Bean Stew?

Here is how you make Black Bean Stew:

 Heat the Olive Oil in a large soup pot over medium heat. Cook Onion, Garlic and Mushrooms for circa 4 minutes, stirring occasionally. Add Bell Pepper and cook for an additional minute or two, continuing to stir. Add the Spices to the pot and stir them into your vegetable mix to heat them up and start blending the tastes. Pour in the Stock, Tomatoes, Black Beans and Sweet Corn and stir well to mix Reduce the heat and simmer for at least 30 minutes. The longer it has to stew, the fuller the taste. Taste the stew occasionally and adjust the spices accordingly ? if the stew is too spicy, add another tin of tomatoes or cloves/cinnamon to ?sweeten? it. Sour Cream will also help to cut the heat.
