You can chop your own if you like).* Roughly chop onion and carrot and add to pot. Saute on med-low until tender, about eight minutes.*Roughly chop bok choi, keeping leaves and stems. (I use two heads of bak choi for this. You could substitute with kale or other hearty greens. For spinach, just add greens later.)*Add bak choi to pot and stir for two-three minutes.*Add stock*Add beans (2 16oz cans or four cups)*Stir in salt, pepper, tarragon, and any other spices you might like.
