What Are The Ingredients For Refried Bean and Veggie Quesadillas Recipe?The ingredients for Refried Bean and Veggie Quesadillas are: 8 La Tortilla Factory- Large Whole Wheat, Low Carb Tortillas2 cups Fat-Free Refried Beans 1 cup frozen corn kernels, thawed 1/4 cup pico de gallo salsa or your favorite chunky salsa 1/2 cup carrots, thinly sliced 1/2 cup green pepper, chopped 1 large jalapeno pepper, minced 3/4 cup onion, diced 6-8 oz. jalapeno jack cheese 1 1/2 teaspoons minced garlic a few dashes of pepper, if desired Non-stick cooking spray How Do I Make Refried Bean and Veggie Quesadillas?Here is how you make Refried Bean and Veggie Quesadillas: In a medium sized non-stick skillet sprayed with cooking spray, begin sauteing the carrots over medium high heat. Cook for 2-3 minutes and onion, jalapeno, green pepper and corn, continue cooking for another 5 minutes. Stir in the pico de gallo and garlic and turn off heat and stir till warmed through.Heat a large non-stick skillet over medium-high heat. Spread about 2 tablespoons of refried beans on half of each tortilla and sprinkle about 2 tablespoons of the veggies over that. Top with about 1/4 cup pepper jack cheese and fold in half. One by one cook the quesadillas on each side, lightly browning each side and allowing beans to warm and cheese to melt. Serve with sour cream, if desired.
