Cover the bowl with dish or pot lid and let soak for 30 minutes.In small non-stick pan sprayed with olive oil or non-stick spray, saute gimme lean, turning and breaking apart with a spatula, until crumbled and cooked. In a pot sprayed with olive oil or non-stick spray, saute veggies (except beans) over medium-low heat, until the veggies soften. You don't want them to brown or burn. Add sausage, tomato sauce, seasonings and liquid smoke. Let the mixture simmer for five minutes, stirring occasionally to meld the flavors. Add the beans. Drain the bulgur and add to the pot; stir until incorporated. Let simmer five minutes more then serve.
