Place chopped onions, pepper and minced garlic into pan and cook over medium heat until tender, about 3 - 4 minutes. Drain black beans, but do not rinse. Mash one cup of the beans with a fork. Place mashed beans and rest of black beans into saucepan with vegetables. Stir in cumin,oregano and tomatoes with juice. Cook for approxiamtely 10 minutes on low heat stirring frequently to prevent sticking. Remove pan from heat and stir in lime juice and hot sauce. Serve in a whole grain tortilla or over 1/2 cup brown rice. Makes 4 - 1 cup servings.I added a couple of ounces of low sodium v8 to add more juice to the bean mixture. You do not need to add the v8. I added it due to an error in the recipe I used that stated in the ingredients, 1 cup of diced tomatoes drained.
