You can use navy beans, white beans, pinto beans. I used dried cranberry beans. They're a pretty pink color! Rinse them and sort through them. Place them in a large pot and add your 8 cups of cold water. Cover, and let sit OVERNIGHT.The next day, drain beans in a colander and rinse well. Rinse pot out, and put beans back into the pot. Add 6 cups cold water, carrots, celery, onions, black pepper, onion powder, garlic powder, and bay leaf. Bring up to a boil, and then immediatley turn heat down to a low simmer and simmer for 1 1/2 - 2 hours, stirring occasionally. Keep the lid tilted on the pot, and check it every 15 - 20 minutes or so, and give it a good stir. Check the fluid level after about an hour. If you need to add a bit more water, add it 1/2 a cup at a time. Add the cayenne pepper, salt, and sugar towards the end of the cooking time. The "gravy" the beans make will thicken considerably.
