Here is how you make Shredded Seitan with Green Beans and Shallots:

Steam green beans until just tender, about 5 min. Rinse under cold water to stop cooking. Set Aside.Heat the olive oil in a large skillet over med-high heat. Add the shallots, garlic, seitan, salt/pepper to taste, and cook until the seitan is browned, about 5 min. Using a slotted spoon, transfer the seitan to a plate and set aside. Deglaze the skillet using the sherry, stirring to dislodge any brown bits from the pan. Stir in the mustard. Add the stock and tamari and bring to a boil. Reduce the heat to low and simmer, uncovered, until the liquid is reduced, about 10 min.
