Cook spaghetti to al dente (or to your preference). 2/ While spaghetti is cooking heat the olive oil in a skillet and add the garlic, onions, mushrooms, and diced pepper and saute for a few minutes. Next add the 2 cans of tomatoes, the drained beans and all the spices and the jalapeno pepper. Mix well and simmer for 5 minutes to blend the flavors. Next add the spinach and cover the pan and cook for 5 minutes to wilt the spinach. Spoon the tomato/spinach mix over the pasta and top with grated Parmesan cheese. This recipe should be enough for 4 to 6 servings, depending on how hungry you are and any additional sides you are serving with this dish. I figured the calories for 5 servings.
