1 Can Diced Tomatoes
1 Cup Frozen Corn
1-2 TBSP Cajun Spice
1 tsp Salt

Here is how you make Vegan Dirty Quinoa and Red Beans:

Makes 6 servings of about 2 cups each. If using as a side dish, divide nutritional info in half for 12 1-cup servings.Dice onion, pepper, and garlic.Rinse the quinoa a few times.Rinse the kidney beans.Heat oil in a large pot and add the onion, pepper and garlic. Saute a few minutes til they start to get soft and the onions are translucent.Add the quinoa and the cajun spice and stir. Saute a minute or two.Add the veggie broth, beans, tomatoes, and corn.Bring to a boil and then simmer for 15 minutes or until the quinoa is done. Youwill need to stir every 5 minutes or so.
