In medium pot, over medium heat, saute onions, celery, bell pepper and garlic in olive oil until onions are clear and everything is soft. (If not using a non-stick pot, you may need more oil.)Add water and lima beans and raise heat to bring to a gentle boil for about 10 min, then reduce heat & simmer on low for at least an hour, stirring occasionally. (Additional simmering time is fine, will result in beans getting even softer, and if desired, you can mash some to make the broth creamier.) While simmering, add salt, pepper, parsley & thyme.
