Mix until yeast is disolved. Set aside for 10 min to proof. Add the salt to the remaining luck warm water. Mix all dry ingredients together in a large bowl making an indentation in the center. Add the yeast mixture and the salt water. Mix by hand until all the flour is absorbed. You may need a little more or less water. If dough is dry add water, if too wet add flour. Knead for at least 10 min (until dough is elastic and smooth) then add the olive oil and knead until it is absorbed. Put dough back in bowl and cover with a damp towel. Sit in a draft free area for 1-2 hrs until it is double in size. Then punch down and divide into balls to make pitas. Set oven at 400 degrees. Put cooking sheet in oven to preheat it. Roll out the dough to 1/8 inch thickness, put 2-3 on preheated sheet on the bottom rack of the oven, and bake 4-6 minutes. Take out of oven and let cool between towels so that they do not dry out. Store in plastic bags.
