2 tablespoons birch syrup (or: brown sugar, firmly packed, honey, maple syrup; I haven't tried molasses yet, but that'd probably be fine)
3 cups/12.8 oz/360 g King Arthur 100% White Whole Wheat Flour
1 1/4 teaspoons salt
1/4 cup toasted walnuts, finely chopped or crushed or ground in blender/food processor
1/4 cup old-fashioned oats, ground in blender/food processor until fine-ish
1/4 cup flaxseed meal

A couple notes before you start: How to measure flour. Use a scale or sift the flour before measuring."Before mixing the yeast and water, take the temperature of the water using a quick-read thermometer. The water needs to be 105 degrees F. to 115 degrees F. to activate the yeast. If the water is too hot, the yeast will die and the bread won't rise." (Suite101, 2009)Add yeast and a pinch of sugar to the warm water. Let that sit for a couple minutes to let the yeast activate. Mix in some of the flour, and let the yeast expand and become puffy.Add wet ingredients. Add dry ingredients. (Optional: mix dry ingredients together separately before adding to wet.) Mix well.Kneed the dough for several minutes. The dough is kind of rough and very sticky. Put the dough back in the bowl, cover the bowl with a clean towel, place in a warmish spot like on top of the fridge and allow the dough to rise till puffy though not necessarily doubled in bulk. This may take about 40 minutes to 2 hours, depending on the warmth of your kitchen.Shape it into an 8-inch log. Place the log in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise. (Hopefully cresting above pan)It rises quickly, so keep an eye on it. Do not leave it to rise too long. It could deflate."Baking Bake the bread in a preheated 350°F oven for about 35 to 40 minutes. It is done when its interior temperature is about 190°F at the center of the loaf. Remove the bread from the oven, and cool it on a wire rack before slicing.
