1 egg, beaten
2 tbsp chopped onion
1 tbsp chopped pepper (opt)
2 tbsp chopped tomato
1 tbsp cooked chopped bacon, chicken, steak (opt)
1/2 oz. cheddar or swiss (or other cheese of your choice) Shredded or chopped
1/2 tbsp.miracle whip lite dressing
(and/or 1 tsp salsa)
1 leaf romaine lettuce, chopped


How Do I Make Breakfast Rollup?

Here is how you make Breakfast Rollup:

In small (1-2 cup size) microwaveable dish, cook onion, pepper, tomato and choice of meat (if desired) for 30-45 seconds on high until just crisp/tender. Remove from microwave. Stir in beatten egg. Return to microwave, cook for 30 seconds more on high, remove and stir again. Top with Cheese and microwave for another 30-45 seconds until egg is cooked and cheese is just melted. Remove from microwave, cover and let set while you place Roll-up on large plate, spread with dressing and lettuce if desired.Spoon Egg mixture onto lettuce, top with salsz if desired and wrap as for a burito tucking in one end.
