Add the spinach and sun-dried tomatoes, and saute for 1-2 minutes. Make sure the vegetables evenly cover the pan.Pour the egg mixture over the vegetables. Sprinkle the feta cheese on top. Reduce the heat to medium-low, and cover the pan. Let cook for 5-6 minutes until the egg mixture is set.Divide the egg into four equal portions. Place one portion onto each sandwich thin.Makes four servings.**Note: you can toast the sandwich thin prior to placing the egg mixture, but I like to throw the sandwich into my panini press to finish.
