Stir in the water until batter is smooth. Then stir in 1/4 cup chopped cooked broccoli (or other cooked vegetable - I like to use up leftovers from dinner).Heat a small non stick skillet (about 6 inches measured across the bottom) over medium heat and add the 2 teaspoons of oil. Pour in your batter like you would a large pancake and cook for 3-5 minutes until the top of the omelette no longer looks wet.
