1 lb linquine
3 cups broccoli, chopped
1 cup sliced carrots
5 cloves minced garlic
3/4 cup vegetable broth
2 tbsp peanut butter
1/4 cup soy sauce
2 tbsp honey
3 tbsp ginger root, grated
3 limes + 3 for wedges
cayenne pepper - approximately 1 tsp
cilantro



How Do I Make Spicy Thai style Noodles with Broccoli and Carrots?

Here is how you make Spicy Thai style Noodles with Broccoli and Carrots:

Bring water to a boil for pasta.Mince 3 cloves of garlic. Saute with chopped broccoli , carrots & salt (using non-stick spray) until veg is crisp-tender. Remove from pan & set asside. Add pasta to water. Cook until al dente. While pasta cooks: Add ginger and garlic to saute pan. Saute (using non-stick cooking spray). Combine veg broth, peanut butter, soy sauce & honey. Add to pan with ginger & broccoli. Bring to a simmer. When sauce reaches consistency to coat pasta, add juice from 3 limes & cayenne pepper (to taste). Add pasta & veg to pan with sauce & combine to re-heat veg. Serve hot, topped with chopped cilantro and lime wedges on the side.
