COOK THE RICEOn your stove top or in your rice cooker, cook 1 cup of dry brown rice in 2 cups water (or according to the package directions).SAUTÉ ONIONS AND PEPPERSIn a pan on your stove, combine 1/2 a diced white or yellow onion, 1 diced red pepper, 1/2 cup of water, 1 tsp of cumin, and 1 tsp of chili powder and sauté for about 10 minutes until the veggies are soft.HEAT THE BEANSIn a saucepan on your stove top, combine 1 can of drained and rinsed black beans, 1/2 cup of water, 1 tsp of cumin, 1 tsp of chili powder, and 1 tsp of oregano and simmer for about 10 minutes until the liquid is reabsorbed into the beans. CHOP & MIXWhile everything is cooking, sautéing, and simmering, chop up 3 tomatoes, 2 cups of spinach, 2-3 green onions, and 1/4 cup cilantro (if you're using it). Mix together in a large bowl and set aside. COMBINEOnce the rice, onions and peppers, and beans are done, add to the bowl of fresh chopped veggies and mix together. Add in the juice of 1 lime, 1/2 a cup of salsa, avocado, and mix together. Divide into two bowls and top with any additional hot sauce you'd like!
