This recipe was given to me by my boyfriend's dad - the only modification I made was to make it a little bigger and to replace the rice with quinoa. It cooks down to a very delicious, soft, dish. What Are The Ingredients For Cabbage Recipe?The ingredients for Cabbage are: 3 Cups chopped cabbage1 Whole green bell pepper, seeded and chopped 1/2 Medium onion, chopped 1-2 Tbsp butter 1 1/2 Cups cooked quinoa (about 1/5-2/3 cup uncooked) 1 1/2 cup stewed tomatoes, canned or otherwise 2 Slices of bacon, cooked and crumbled (drippings reserved) Salt and Pepper to taste Note: If you do not wish to use butter or bacon drippings you can replace those two items with 3 tablespoons of some other oil or fat. The quinoa can also be replaced with cooked rice if desired. Of course, do not use the bacon or bacon drippings if you want this dish to remain vegetarian. How Do I Make Cabbage?Here is how you make Cabbage: If you're not using leftover rice or quinoa, cook as directed.If using bacon, fry in a large pot or wok - when done remove the bacon strips and leave drippings in pan.While bacon is cooking chop up your cabbage, bell pepper, and onion. After removing bacon from the pan add the butter - when melted add the cabbage, bell pepper, and onion. Cover and cook on medium-low for 10 minutes.Crumble bacon while this mixture is simmering. After the 10 minutes are up mix in the tomatoes, cooked quinoa or rice, crumbled bacon, salt, and pepper to taste. Cook on medium heat until hot throughout, or as long as desired.
