1/3 cup uncooked quick (not instant) oats
1 cup whole wheat flour
1/2 cup white unbleached flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ginger
(or substitute cinnamon and ginger with 1 1/4 tsp pumpkin pie spice)
1/2 cup granulated sugar
1/4 cup ground flax
1/3 cup unsweetened applesauce
1 tbsp vinegar
1/2 tsp almond extract
1 tsp vanilla extract
1/2 cup sweetened flaked coconut, 2 tbsp reserved
1/4 cup chopped walnuts

Prepare chai ahead of time. Pour about 1 1/4 cups boiling water into a heat-proof cup and let the tea bags steep until water is cool. When you remove the tea bags, the water level should drop down to 1 cup. If it drops more, squeeze the tea bags to get the extra water out.Preheat oven to 350?. Grease a 9- or 8-inch square baking pan.Combine all dry ingredients from quick oats through flax in a medium bowl. Stir in wet ingredients from chai through extracts. Mix well. Stir in coconut flakes and chopped walnuts. Pour into greased baking pan and sprinkle with reserved coconut.
