Here is how you make Porkkanapannukakku (Finnish Carrot Oven Pancake):

In a mixing bowl, combine carrots, onions, and bread crumbs or wheat germ. Toss to mix evenly. Preheat oven to 450 deg.F. Combine eggs, milk, flour, and seasonings, whisking till smooth. Combine with carrot mixture. Heat olive oil in a heavy (oven-safe) 9- to 10.5-inch skillet. When the skillet is quite hot, pour in the pancake mixture, making sure the carrots are evenly distributed. Place the skillet in the hot oven. After 20 minutes, lower the oven temperature to 350 deg.F and continue to bake for another 10 to 15 minutes. The pancake should be light brown, puffy, and crisp when done. Serve immediately. Garnish with sour cream and/or a tangy jelly.
