How Do I Make Tofu Carrot Scramble?

Here is how you make Tofu Carrot Scramble:

Heat olive oil in pan over medium heat. Cook garlic and onion until tender. Add carrots. Cook until tender, NOT MUSH!!! Add Tofu. Cook until warm. Add Tamari or soy sauce to taste. Cook an additional couple of minutes until flavors blend (tofu will pick up flavors!). This is ready to eat if you want it warm. I like to cool it first and add it to salads or eat as a sandwich spread when tossed with mayo or plain greek yogurt.Makes roughly 10 1/2 cup servings.Number of Servings: 10Recipe submitted by SparkPeople user TAMOLIE.
