4 cups spinach (or stemmed & chopped kale, or any kind of greens)
2 Tbs extra-virgin olive oil
1 red onion, sliced in half-moons'
Sea Salt
2 carrots, washed and diced small
3 cloves of garlic, minced
1 tsp fresh ginger, minced
2 Tbs fresh squeezed lemon juice

Here is how you make Greens and Carrots:

Cover the greens with cold water and set aside.Heat the olive oil in a saute pan over medium-high heat,Saute the onions with a pinch of salt for 3 minutes, then turn the heat down to low and leave them alone for about 20 minutes. They will be carmalized (golden brown) and sweet.turn the heat back to medium, add the carrots, garlic, ginger, and a pinch of salt. Saute 3-4 minutes, until the carrots are tender.Drain the greens and add them to the pan with 1/4 tsp salt. Saute about 3 minutes, until the greens wilt.
