0.3 cup Colby and Monterey Jack Cheese, shredded

dash nutmeg, for the eggs

Here is how you make Rose's Breakfast Casserole:

1. Mix the eggs and half-and-half as for scrambled eggs. Salt, pepper, and nutmeg them.2. Preheat a cast-iron skillet (or other range-to-oven dish). Preheat oven to 350. If you're using bacon or ham, cook it now in the skillet and then remove to a bowl, leaving behind the fat (substitute it for the oil or butter to follow).3. Cook the cubed potatoes in a bit of oil until they're soft with a nice brown crust. (If you use leftover baked potatoes, you can omit most of this step and just cook them till they're heated through.) Remove to a bowl. If you want to use other vegetables, cook them next.4. Wipe pan out and preheat the butter in the pan. Add the bread cubes and cook till they're toasted and golden. Add back the potatoes.5. Pour over the egg mixture. Try to cover everything. Don't stir it. Sprinkle the cheese on top of the food. Cook for a few minutes more until the mixture is done on the bottom. Then put the whole pan in the oven and cook another few minutes, until the top is done. Can be broiled but if you go that route, you need to be paying strict attention.6. You can serve it immediately OR eat it lukewarm. Store leftovers in the fridge and reheat in the microwave.
