2 vegetarian Italian Sauage links
2 cups bottled pasta sauce
1.5 c ricotta cheese (lo fat or fat free)
1 egg (or 1/4 c 1egg substitute)
3/4 c shredded parmesan cheese
1 c fresh spinach leaves
1 garlic clove, diced
1/4 cup chopped onion
1 Tbsp olive oil
1/4 tsp nutmeg
salt and pepper to taste


How Do I Make Italian Pasta Casserole?

Here is how you make Italian Pasta Casserole:

Cook the penne according to package, drain, and rinse. Thaw and chop the veggie Italian sausage. Mix with the penne and prepared tomato sauce in a 2 quarter casserole. Set aside. Cook the spinach in boiling water until soft. Rinse, press out the water and chop. Saute the onion and garlic in olive oil. When onion is translucent, add the spinach and saute for a couple minutes. Be careful to avoid scorching the spinach. Mix the spinach together with remaining ingredients. Top the pasta mixture with the cheese.
