12 Eggs (I use 7 whole and 5 whites)
6 Turkey Bacon slices (or turkey sausage links)
2 cups Sweet Potato Fries (I bought frozen?so much easier than chopping up a fresh potato but either works)
1/2 White Onion
2 Cloves Garlic
1/2 cup Julienned Spinach
1/3 cup Milk
1/3 cup Parmesan or Feta Cheese
1 Tbsp chopped fresh Cilantro
S & P
Olive oil or Cooking spray to cook onions in

Here is how you make Sweet Potato Breakfast?Casserole:

1. Preheat the oven to 375 degrees while you assemble the casserole.2. Line a 9 x 13 pan with one layer sweet potato fries. (I did not grease the pan, you may, but it was not necessary you just need to let it cool for 5-10 minutes before serving)3. Chop up your sausage and disperse on top of the sweet potatoes.Here is a quick tutorial on how to easily julienne spinach -▪Tear the stems off of each spinach leaf.▪Stack about 7 or so Spinach leaves on top of each other▪Roll the stack of spinach leaves up lengthwise.▪Slice the rolled up stack of spinach leaves and you will get lovely little strips of spinach!4. Sprinkle the spinach strips on the casserole.5. Evenly sprinkle the feta cheese on next.The next step is optional depending on your personal preference.6. I prefer to first saut? the onions and garlic in about a Tbsp of olive oil for a few minutes to give the flavors a kick start.7. Layer the onions and garlic on top of the casserole.8. In a bowl beat the 5 egg whites and 7 whole gets with a splash of water (1 tsp) and the milk.? ? ? ? ?(I use the egg whites to try to cut some cholesterol, if you want to use whole eggs you may only need about 9, if you want all whites you will need more eggs)9. ?Add Salt and Pepper (you don?t need much) and the fresh chopped cilantro to the eggs10. Mix the spices into the eggs so they will evenly distribute.11. Pour the egg mixture over the casserole layers evenly.12. Everything should be just about covered by egg.?13. Pop the casserole into the oven for about 45-55 minutes until the top starts turning golden brown and if you test it with a fork the fork comes out clean.14. Let it sit for about 5-10 minutes and then serve and enjoy!
