Preheat oven to 350*2. Combine 0.5 cup quinoa and 1 cup water in small pot. Bring to a boil, then low down the heat and cover. Quinoa will be cooked in about 15 minutes.3. Mist large pan with extra virgin olive oil and heat. Saute kale, romaine lettuce, and sprouts until all are wilted.4. Mix goat cheese into cooked quinoa. Stir until goat cheese melts, and is evenly distributed throughout quinoa.5. Combine greens and quinoa in the large pot. Stir in feta cheese.6. In large bowl, combine 4 large eggs and 1/4 cup 2% milk. Beat.7. Remove quinoa mixture from heat. Stir in egg mixture.8. Pour quinoa and egg mixture into a casserole dish.
