-1 3/4 cups milk (divided)
-3 tbsp all purpose flour
-1 1/4 cup shredded cheddar cheese
-1 1/2 tsp mustard (preferably Dijon)
-salt and pepper to taste

*can substitute a head of cauliflower chopped


How Do I Make Spinach Carrot Casserole?

Here is how you make Spinach Carrot Casserole:

1. Preheat oven to 425 degrees F and spray a 12"-8" pan with nonstick spray.2. Mix crumbs, olive oil and paprika in a small bowl and set aside. 3. Cook carrots in slightly salted water until almost completely tender. Then add spinach until wilted and carrots are tender. 4. Drain and rinse with cold water to stop further cooking. Evenly place in prepared pan and toss with 1/3 of crumb mixture. 5. Put 1 1/2 cup of the milk into a saucepan and heat on medium. 6. While it's heating, in a small bowl whisk the flour with the remainder 1/4 cup of milk until smooth. Then, whisk into the saucepan milk once it is steaming.7. Whisking often, continue heating milk mixture until it has thickened and is bubbly. Mix in cheese, mustard and salt and pepper. Pour over the vegetables evenly. 8.
