What Are The Ingredients For Squash Pan-Casserole Recipe?

The ingredients for Squash Pan-Casserole are:

1 large (or 2 small) White Onions (I used Vidalia)
3 Medium sized yellow summer squash
A little less than 1/2 a can of Cream of Mushroom Soup (condensed)
1/2 C of cheddar cheese, shredded
Olive Oil - for cooking veggies in the pan
Salt & Pepper & any other spices you wish to add (I used some Chipolte pepper to kick things up!)


How Do I Make Squash Pan-Casserole?

Here is how you make Squash Pan-Casserole:

Cut then onions in half & then thinly slice.Sautee in olive oil (amount to you taste) till nearly translucent.White the onions are cooking, thinly slice the squash. Add the squash to the pan & a little more olive oil.When veggetables are cooked through (you cna decide how cooked you like them). Add the cream of mushroom soup. Once the soup has thinned out a bit, add the cheese & spices.I served with rice as a meal, but this would make a great side dish to accomany any dish.Serving Size: Makes 2 meal size servingsNumber of Servings: 2Recipe submitted by SparkPeople user JETATMAN.
