2 large tomatoes, peeled and cut into quarters
1 medium-sized zucchini, cut into 1 1/2 inch chunks
3/4 pound green beans, each cut in half
1/2 small head cauliflower, separated into florets
2 Tbsp. lemon juice
1 garlic clove, crushed
2 tsp. salt
1 tsp. paprika

The original recipe my mom has includes 1 10 oz. package of frozen peas, but I LOATHE peas, so I leave them out and think the dish is better for it. But you can feel free to add them!Real beef bouillon is also in the original recipe, but since that makes it NON vegetarian, I use liquid smoke, faux-beef, or veggie bouillon instead.~~~~About 2 1/2 hours before serving: 1. In 12-inch skillet over medium high heat, in hot oil, cook onions and green peppers until browned, about 10 minutes, stirring often.2. In 13 x 9 inch baking dish or 3 1/2 quart casserole, combine barley, bouillon, and 1 cup water. Add carots, tomatoes, zucchini, green beans, peas, cauliflower, then onion mixture.3. In cup, combine lemon and garlic; pour over vegetables; sprinkle with salt and paprika. Bake in 400 degree oven for 1 1/2 hours or until barley is tender.
