1 16-oz can of pinto or black Beans (I use the low-sodium Sensibly Seasoned kind)
1 can Yellow Sweet Corn
1 tbsp or more ground Cumin, to taste
.5 cup Salsa, or more to taste, divided
.5 tsp or more minced bottled Garlic, to taste
2 cups low-fat shredded Cheddar or Cojack Cheese, divided
10 Flour Tortillas (approx 7-8" dia)
1 10-oz can of Enchilada Sauce (I use the mild kind but spice it up if you wish!)

Here is how you make Heather's Bean, Corn, and Cheese Enchiladas:

Drain and rinse beans and corn and put in a mixing bowl. Add 1/4 cup of the salsa and the cumin and garlic. Mix well. Stir in 1 cup of the cheese. Spoon some of the mixture down the center of each tortilla, rolling each one up and placing them in a row, seam down, in an 11 x 7" baking pan. Once all of the tortillas are full and in the pan, combine the remaining salsa and the enchilada sauce and spoon this sauce evenly over the top. (Sometimes I use two cans of the enchilada sauce, or add some water....I like my enchiladas kind of gooey!)Put the pan, covered with tinfoil, in oven at 350 degrees for about 45 minutes or until enchiladas are hot and bubbly. Remove pan and tinfoil, sprinkle the remaining cheese on top, and run back in the oven, uncovered, to melt the cheese.You can sprinkle cilantro on top or serve with sour cream or tortillas.
