200ml water, boiled
2 cups fresh green beans
1 small sweet onion
3 cloves garlic, diced
10 g cashews, chopped
20 g pistachios, chopped
60 g soft goat cheese
2 tbsp olive oil
salt and pepper to taste

Here is how you make Couscous with green beans, nuts and goat cheese:

Makes 2 servings.Prepare all vegetables and nuts before cooking: Finely chop onions, garlic, trim ends of beans, chop nuts. Prepare couscous for cooking. Place couscous in a pot, add chopped onion, and 1 tbsp oilve oil. Stir, then set aside.Prepare beans. For soft, evenly cooked beans, steam in a colander until firm-tender (test by poking them with a fork), then toss in a fry pan with 1 tbsp olive oil, salt, pepper and chopped garlic until desired tenderness is reached. If you prefer crunchier beans, sautee in a pan with olive oil, salt, and pepper until desired tenderness is reached. Add garlic when beans are almost cooked. When beans are nearly done, boil water in a kettle and add to couscous. Simmer for 5 minutes with the lid on. After 5 minutes, fluff the couscous with a fork.To serve: place couscous on the bottom of the serving dish, layer cooked beans over couscous, sprinkle with nuts, then add crumbled goat cheese on top.
