2 tbsp canned chipotle peppers in adobo sauce, chopped
1 can black beans, rinsed and drained

Here is how you make Spicy Black Beans and Cheese Quesadilla:

For the quesadilla:Spray pan with cooking spray Place 1 tortilla flat and cover with 1/2 cup shredded cheese. Sprinkle 2 tbsp diced jalapeno evenly over cheese. Place second tortilla on top of cheese. Cook over medium heat until you can see that the bottom tortilla has slightly shrunk in diameter. Flip quuesadilla using large spatula and heat second side. Set aside to cool. Repeat with remaining tortillas, cheese & jalapenos.For the beans:Saute onion, bell pepper, garlic & chipotle pepper in olive oil until onions are soft and translucent.
